Scientists from the School of Biomolecular and Biomedical Sciences at University College Dublin Conway Institute made the discovery.
It is noted that before the Middle Ages, as a rule, the yeast Saccharomyces cerevisiae was used in brewing beer. They made ale. This type of yeast is still used today to make ale, wine, whiskey, bread and many other products.
And for the production of lager, the yeast Saccharomyces pastorianus is used. It is a hybrid of two parental yeasts, one of which is the old ale yeast Saccharomyces eubayanus.
Scientists suggest that this type of yeast originally came from Patagonia and then colonized the whole world due to the fact that the yeast adapted to low temperatures.
