This year’s Shrove Tuesday or Cheese Week starts on Monday, February 20th and ends on Sunday, February 26th. This week always falls on the eve of Lent.

Pancakes are a traditional dish for Maslenitsa. But for variety, people cook different food.

  • 2 medium onions,
  • 1 egg
  • 2 tbsp. spoon of flour (but there are many without flour and it is also very tasty),
  • oil,
  • ground black pepper to taste

Cooking

  1. Grate the peeled potatoes on a fine grater. Onions can also be grated, but it is better to chop finely so that the pancakes are not rare and the bitterness is not felt in them.

  2. If the potato mass is rare, then the excess liquid can be squeezed out a little and dried. Add the egg, flour, salt, pepper to the vegetable mass and mix well.

  3. If you are preparing a lean dish, the egg can be omitted. Thanks to the flour, the dough will stay in a heap and not crumble in the pan.

  4. Fry potato pancakes in oil in a hot pan without a lid, putting flat cakes with a spoon, like ordinary pancakes. The size of the pancake should not be large so that it is not raw inside. After the pancakes are browned on one side, flip to the other side.

  5. Serve with sour cream. Pancakes are delicious both hot and cold.

Pie with red fish

Ingredients:

Salmon or lightly salted trout 300 – 400 g.
Yeast puff pastry
Eggs 4 pcs

Rice 1 cup

How to cook:

  1. First, boil the rice ahead of time so it has time to cool.

  2. Line a pie dish with parchment paper and brush with butter.

  3. Roll out two pieces of dough. Enter a letter at the bottom of the form.

  4. Remove the skin and bones from the fish. Cut into small pieces.

  5. Boil the boiled egg and chop the onion.

  6. Now lay the layers of pie filling on the base: a layer of rice, then onions and eggs. The last is a layer of fish.

  7. Raise the second half of the dough. Pinch the pie dough around the edges. Brush the top of the pie with butter and sprinkle with breadcrumbs. To release steam, make several holes with a knife.

  8. Send the pie to the oven preheated to 180 degrees for 40 minutes. Then take it out and let it rest for another 10 minutes.

Ingredients:

  • 200 ml of kefir (or whey),
  • 1 egg
  • 300-350 g of flour,
  • 2 tbsp. spoon of oil
  • 1 teaspoon of soda
  • a pinch of salt,

For the filling:

  • 400 g potatoes
  • 1 onion
  • dill,
  • 2 tbsp. spoon of oil
  • ground black pepper to taste
  • salt to taste.

Cooking:

  1. Break the egg and mix with kefir. Add the sifted flour, mixed with soda and salt, mix and add the butter while kneading the dough.

  2. Knead the dough until it stops sticking to your hands. Then leave the dough for 30 minutes, covering it with a napkin.

  3. At this time, prepare the filling. Finely chop the onion and saute in oil.

  4. Peel the potatoes and decoction in salted water. Make a puree by adding roasted, chopped dill, pepper and salt. Cool the filling, and you can start sculpting the dumplings.

  5. Shape the dough into small balls and roll them into patties. Place the filling on each cake and pinch the dumpling.

  6. If you are steaming dumplings, use a special device, such as a double boiler or pressure cooker. You can also use a colander inserted into the pot and covered with an upturned bowl.

  7. During the steaming process, the dumplings should almost double in size, therefore, so that they do not stick together, lay them not close to each other, but at a certain distance. Steamed dumplings are cooked for exactly 5 minutes.

  8. Put the butter on the prepared dumplings and serve hot with sour cream.

Lazy dumplings with cheese

Ingredients:

  • 400 g cheese
  • 200 g flour
  • 2 eggs,
  • 2 tbsp. spoon of sugar
  • 10 g vanilla sugar
  • a pinch of salt.

Step-by-step recipe:

  1. Rub the cheese through a sieve to remove possible lumps and improve its structure.

  2. Rub the egg with sugar and vanilla sugar and mix with the cheese.

  3. Combine the sifted flour with salt, and gradually add it to the cheese, kneading the dough. It should be soft and may stick a little to your hands.

  4. For convenience, divide the resulting dough into several parts. Dust the work surface with flour and roll the dough into sausages. Cut small pieces of dough – these will be lazy dumplings with cheese.

  5. Boil the lazy dumplings in lightly salted boiling water for three minutes after they float to the top. Remove with a slotted spoon, add a pat of butter and serve hot.

  6. Serve lazy cheese dumplings with sour cream, yogurt, jelly, honey, condensed milk, jam or just berries.

Ingredients:

  • 2 cups of flour,
  • 200 ml of kefir,
  • 10 g dry yeast
  • 2 tbsp. tablespoons of starch
  • 2 tbsp. spoon of oil
  • a pinch of sugar
  • a pinch of salt,

For the filling:

  • 300 g potatoes
  • 300 g mushrooms
  • 1 onion
  • 150 ml sour cream
  • 2 tbsp. spoon of oil
  • ground black pepper to taste
  • salt to taste.

Cooking:

  1. Mushrooms are cut into small cubes. Finely chop the onion. Saute onions in oil for 3-5 minutes. Then add the mushrooms and fry until the liquid evaporates. Salt, pepper, mix and cool.

  2. Boil peeled potatoes in salted water until soft and mash with sour cream.

  3. Prepare the dough for pies with potatoes and mushrooms. To do this, add sugar, salt, yeast to hot kefir, mix and leave for 5 minutes.

  4. Add starch, butter, sifted flour and salt to the dough. Knead a stiff dough, roll it into a ball and put it in a warm place to rise.

  5. Cut small pieces of dough and roll into cakes. Make a small indentation in each cake for the filling and place on a greased sheet.

  6. Fill the cavity with the mushroom filling and top with the mashed potatoes from a pastry bag.

  7. Send the potato patties to a preheated 200°C oven and bake until golden brown, about 15 minutes.

Yeast pies with fruit filling

Ingredients:

  • 300 ml of 2.5% kefir,
  • 600 g of flour
  • 3 eggs,
  • 100 ml of milk
  • 150 ml of oil
  • 50 g yeast
  • 2 tbsp. spoon of sugar
  • 10 g vanilla sugar
  • a pinch of salt,
  • 700 g of fruits (apples, plums, pears, etc.).

Cooking:

  1. Add sugar and yeast to warm (not hot) milk. Stir, cover with a napkin and put in a warm place for about 10 minutes for the dough to rise.

  2. Mix kefir with butter and heat a little. Add 2 eggs to the mixture and mix. Pour in the brew and stir again. Then add the sifted flour with salt and vanilla sugar and knead the dough.

  3. Cover the dough with a towel and let it rise in a warm place for 30 minutes to rise.

  4. At this time, prepare the filling. Peel the selected fruits from stones or seeds and cut into small pieces.

  5. Form small cakes from the dough. Put the filling on them, add sugar to taste. If the fruit is too juicy, you can add a little starch so that the juice does not flow out of the pies during the cooking process.

  6. Pinch the edges of the patties and place them seam side down on a greased baking sheet. Brush the top with beaten egg for a more appetizing, glossy look.

  7. Leave the pies for 10-15 minutes to rise.

  8. Send the baking sheet to the oven preheated to 180 ° C for 15-20 minutes.

Ingredients:

  • 2 bananas
  • 500 ml of kefir,
  • 1 st. spoon of butter,
  • 330 g semolina,
  • 180 g of sugar
  • 10 g vanilla sugar
  • a pinch of soda
  • a pinch of salt.

Cooking:

  1. Combine kefir with sugar, vanilla sugar and salt.

  2. Mix semolina with soda, add to the liquid mixture and mix well.

  3. Peel the bananas and cut into 1.5-2 cm thick slices.

  4. I poured half of the dough into a mold greased with butter and sprinkled with semolina. Spread some of the bananas over the dough and pour over the rest of the dough. Arrange the remaining banana slices on top of the pie.

  5. Send the banana pie to a preheated 180°C oven and bake for 40 minutes.

  6. Cool the finished banana pie, remove from the mold and serve.
