cauliflower gnocchi
Ingredients
Pasta
- 450 g of cauliflower
- 50 g flaxseed flour
- 100 g of almond flour
- 2 egg yolks
- Chopped parsley, nutmeg powder, salt and turmeric to taste
- Water
- Almond flour for flouring
Sauce
- 1 cup raw cashew nuts
- Water
- Salt and ground black pepper to taste

In a saucepan, cover the cauliflower with water and bring to a boil over medium heat until very tender. Drain the cauliflower and grind it in the food processor until you get a puree. Wait to cool down and place the puree inside a dish towel. Squeeze well until all the water comes out. In a bowl, mix the cauliflower puree with the flour. linseed and almonds. Add the salt, nutmeg and turmeric and mix. Add the egg yolks and mix until you get a homogeneous mass. Cover the dough with plastic wrap and place in the fridge for 15 minutes. On a surface floured with almond flour, roll portions of the dough and cut into gnocchi shapes. In a large pot of boiling water, place the Gnocchi for cooking. As soon as it rises to the surface, remove it from the water.
Sauce
Soak the cashew nuts in a bowl of water for 8 hours. Then drain and wash it under running water. In the blender, place the cashew nuts and 3 cups of water. Beat for 1 minute. Strain the milk obtained through a very fine sieve. Put the milk in a skillet and lead to medium fire, always stirring until it thickens. Season with salt and pepper. Serve the gnocchi with the sauce and sprinkled with parsley.
Tilapia with tomato sauce

- 2 tilapia fillets
- 2 minced garlic cloves
- 1 red pepper cut into strips
- 1 cup of tea Homemade Tomato Sauce
- 1 tablespoon olive oil
- Juice of 1/2 lemon
- Salt, basil leaves and ground black pepper to taste

In a container, season the tilapia fillets with salt, black pepper, garlic and lemon juice. In a skillet with olive oil, grill the fillets of fish on both sides. Then add the tomato sauce and bell pepper. Cook for another 5 minutes. Turn off the heat and serve the fish with basil leaves. Serve immediately.
Eggplant roll with minced meat
Ingredients
- 400 g of minced meat slim
- 2 eggplants cut into slices
- 1 chopped onion
- 2 crushed garlic cloves
- 3 tablespoons homemade tomato sauce
- 1/4 tomato cut into small cubes
- Olive oil, salt and ground black pepper to taste
Method of preparation
In a pan, heat the oil and brown the garlic and onion. Then add the ground beef and sauté until it loses its reddish color. Season the meat with salt and pepper and add the diced tomatoes and tomato sauce. Cook for another 2 minutes, turn off the heat and set aside. In a container, mix the beaten eggs, onion, broccoli, basil, salt, black pepper and nutmeg. Transfer the filling to the baking sheet and cover like the rest of the dough. Take the pie to the preheated oven for 50 minutes. After that period, remove from the oven and serve next.

broccoli nuggets

- 3 eggs
- 1 cup of tea bran oat

Method of preparation
In a pan, cover the broccoli florets with water and lead to medium fire until they are soft. Then drain them and beat it in the blender. Add the eggs, the oat bran, the salt, the black pepper and the green smell and beat until you form a paste. Put it in a container, make balls with the dough and knead it with a fork. Place the nuggets in a greased shape with olive oil. Take to preheated medium oven for 25 minutes, turning them halfway through the time. Serve next.
