Chocolate is in the spotlight this week with the 27th edition of the Versailles Salon de la Porte, which will take place from October 28 to November 1. In the program: six finals of international competitions, all kinds of exhibitions, meetings with 200 exhibitors, not forgetting the traditional parade. He has long impressed us with his pastries, but he also excels in the taste of cocoa. The “chocolate melter”, which has been serving the most beautiful tables in the capital for years, has served for fifteen years in its modern and raw surroundings in the Marais. Rich in flavor, not too sweet, his ganaches offer key pairings with dark chocolate: chestnut honey, pepper, coffee-cardamom… His daughter, Jade, who worked alongside him for three years, soon opened her own chocolate factory at the age of 33. : Opera avenue.
