When choosing which pine cone to buy, it is important to observe the firmness of the fruit’s skin, which must be soft, yet firm and without liquid leakage. “The sweeter aroma and the softer skin may indicate that the pine cone is already more mature and will need to be consumed quickly”, advises Renata.
The nutritionist indicates the inclusion of fruit as snackintermediate between main meals, dessert or in the composition of recipes. To increase the durability of the pine cone, the expert recommends freezing the pulp. “Frozen fruit is valid for up to 90 days,” she clarifies.

pine cone sorbet
Ingredients
- 4 cups seedless pineapple pulp
- 1 tea cup of water
- 1 lemon juice
- 4 tablespoons of sugar
Method of preparation
Beat all ingredients in the processor. Take it to the freezer for 2 hours and then take it back to pastaprocessor and blend until creamy. Divide into bowls and serve immediately.

Ingredients
- 500 ml of coconut milk
- Pulp of 2 seedless pine cones
- 1 cup of ice tea
Method of preparation

Ingredients
- 1 cup of pine nut pulp
- 1 cup of cream ice cream
- Pulp of 1 passion fruit
- 2 tablespoons of sugar
Method of preparation
Beat the pulp of the pine cone in the blender or mixer. In a container, gently incorporate the cream ice cream into the fruit pulp. Take it to the freezer. In a pan, cook the passion fruit pulp with the sugar, over low heat, until it forms a syrup. Take to freeze for at least 2 hours in the fridge. Remove the cream from the freezer, serve in bowls and finish with the passion fruit syrup.
