Bean stew cookie
Ingredients
Pasta
- 200 g of pepperoni sausage smoked and minced
- 2 cups of cooked black bean beans
- 2 cups of bean broth
- 2 eggs
- 6 tablespoons breadcrumbs
- Salt and ground black pepper to taste

- 1 cup of chopped bacon
- 1 peeled and chopped onion
- 3 chopped kale leaves
Method of preparation

In a pan, place the sausage and lead to medium heat to fry until golden. Add the grains and bean broth, salt and black pepper and cook for 2 minutes. Turn off the fire and wait to cool down. Afterwards, transfer the mixture to a blender and beat until you get a homogeneous consistency.
Transfer the mixture back to the pan, add the eggs and breadcrumbs and cook over medium heat until it comes away from the bottom of the pan. Turn off the fire, have the dough over a container and take it to the fridge for 30 minutes.
Filling
In a pan, place the bacon and onion and lead to medium heat to fry until golden. Add the kale and sauté until wilted. Turn off the heat and set aside.
Assembly
With the help of a spoon, take some dough and open it in the palm of your hand. Stuff with the cabbage and shape into a ball. Repeat the process with all the dough and roll in breadcrumbs. In a pan, put the oil and lead to medium fire to warm up. Using a slotted spoon, fry the feijoada fritters and place them on a paper towel-lined container. Serve immediately.

- 1 tablespoon of salt
- 3 eggs
- 1 tea cup of oil
- 100 g of biological yeast
- 1 kg of wheat flour
- 2 tea cups of warm water
- 3 tea cups of warm milk
- 300 g of sliced ham
- 300 g of mozzarella cheese sliced
- 2 tomatoes cut into rounds
- 1 onion, peeled and cut into rings
- 1 egg yolk for brushing
- Wheat flour for flouring
- Oil for greasing
Method of preparation
In a blender, place the milk, water, salt, sugar, yeast, oil and eggs and beat for 3 minutes. Transfer to a container and gradually add the wheat flour and mix until you get a homogeneous dough. Knead the dough well and let it rest for 15 minutes.
Afterwards, sprinkle a smooth surface with wheat flour and open the dough with the help of a rolling pin. Place the cheese, ham, tomatoes and onions on one side of the dough and fold in half. With the help of a knife, cut the dough in the shape of a square and have it on a greased baking sheet. Let rise and brush with egg yolk. Take to preheated oven at 180°C until golden. Serve immediately.
Tapioca stuffed with dried meat

- 1 package of tapioca flour
- 300 g of dried meat desalted, cooked and shredded

- 2 garlic cloves, peeled and crushed
- 1 chopped tomato
- 1 tablespoon olive oil
- Salt and oregano to taste
Method of preparation
In a skillet, place the sifted tapioca flour and cook until it releases from the bottom of the pan. Turn off the heat and set aside. In a pan, put the olive oil and lead to medium fire to warm up. Add the onion and garlic and brown. Add the dried meat, salt and oregano and mix well. Arrange the filling over the tapioca and serve immediately.

- 500 g of rump diced
- 1 peeled and chopped onion
- 1 clove of garlic, peeled and crushed
- Salt, ground black pepper and cumin to taste
- 2 tablespoons of oil
Method of preparation
In a container, place the meat and season with salt, garlic, onion, black pepper and cumin. Cover and refrigerate for 15 minutes. Afterwards, assemble the skewers with the pieces of meat and set aside. In a pan, put the oil and lead to medium fire to warm up. Fry the skewer until golden on both sides. Serve immediately.
