This Sunday we are preparing a colorful dish, traditional chili con carne.
To gently recover from the holiday season, we gather around the table to enjoy the classic chili concar this Sunday a dish synonymous with comfort, but above all, very easy to prepare.
However, there is one little rule to remember to make your chili drink a success: don’t forget to soak the red beans in cold water so they’re ready the next day. Also, because of the season, we’re substituting tinned tomatoes. How about sweetening the dish with a spoonful of crème fraîche? : Get your aprons.

The steps
The day before yesterday
Soak the red beans overnight in cold water.
The next day
Drain the beans, rinse them, immerse them in a large pot of cold water. Add the bay leaves, bring to a boil and cook for 2.5 hours, covered and simmering lightly (the beans should be mashed easily). Season with coarse salt 30 minutes before the end of cooking.
Prepare an aromatic garnish
Peel and chop the onion and garlic. Cut the tomato into small cubes. Drain the red beans. Melt the butter in a pot, brown the onion and garlic for 2 minutes.
Cooking and grooming
Add the meat, cook for 5 minutes on high heat, stirring. Add red beans, tomatoes, chilies, cumin, and tabasco. Mix well, check seasoning, and simmer for 20 minutes. Serve hot.
