The talented pastry chef responsible for the sweet score at the Park Hyatt Paris-Vendôme has just been named Pastry Chef of the Year 2024 by Gault&Millau.

A well-deserved accolade for the Korean-born confectioner, who has stood out for several years for her haute couture creations that straddle the border between art and pastry. For these chewy gems, he’s actually developed a process that requires a four-week break. This ability to use time to enhance flavor is evident in his recipe for a stunning Douillon aux pomme, served in the palace’s Café Jeanne, which requires five days to cook.
But above all, in the menu of Pur’ (2), a 1-star restaurant, his creativity and elegance are expressed, namely: thanks this frozen Korean pastry made from glutinous rice flour, which the chef combines with mango and passion fruit sorbet and a delicate pumpkin cake spiced with tonka bean. Narae Kim has been forging this unique style for ten years. He, who grew up in South Korea, always dreamed of kitchens in Parisian palaces. And he put all the assets on his side.
In 2015, he started with the Park Hyatt group in Asia as a commissary, sous chef, then pastry chef, and won a gold medal twice in the World Pastry Chef Challenge. Three years later he joined Cheval Blanc Courchevel before joining the Aurelien Rivoire brigade under Yannick Alleno. An exemplary journey that led him to the rue de la Paix, where today he can develop his pioneering spirit, mixing classic gestures and innovation.
