Preparing the recipe

  1. 01:00Making knives

    Soak the knives in salt water for 1 hour. Wash them and put them in the oven for 2 minutes at 180°C. Remove from oven and let cool in ice water to stop cooking. Save the shells for dressing and clean the razor clams. Cut them into cubes, add lime zest and juice, finely chopped onion, salt and Espelette pepper.

  2. 02:00Preparation of mayonnaise

    Beat the egg yolk with the mustard and add to the oil, as soon as the mayonnaise hardens, add the spirulina and a little lime juice.

  3. 03:00Get dressed and done

    Boil the peas in salted boiling water for 4 minutes, then pour them into cold water. On each plate, place the shells on coarse salt, divide the marinated razor clams, and add a little mayonnaise and some peas, as well as garden herbs and flowers.
