The steps

Mix the egg yolk with crème fraîche. Remove from heat, pour this mixture into the hot sauce, stir vigorously. Return to a boil. Check the seasoning.

Grooming and dressing up

Cut the chicken, serve with vegetables, sprinkle with white sauce. Serve with rice.
