Pastry chef Nina Metayer is also inspired by seasonal fruits and offers a spring version of Saint-Honoré, a great classic of French gastronomy. Showcasing a heart outline, the creation is garnished with strawberry and raspberry confit and whipped cream with elderberry syrup, encased in generous strawberries and raspberries for a refreshing chew. Finally, the whole thing is based on a layer of Charentes-Poitou AOP butter.
