Mexican Elena Reygadas, chef and owner of the Rosetta restaurant in Mexico City, was named the “best chef in the world” in the 2023 British ranking on Tuesday, April 18. 50: The best.

Owner of her own restaurant in a private house in Mexico City’s Roma district since 2010, the 46-year-old revisits traditional Mexican cuisine with a seasonal and local menu from small producers.

Aztec, Mayan and Amerindian specialties
From a large family, Elena Reygadas studied cooking as a child and then studied English literature at the National Autonomous University of Mexico. However, he never stopped cooking and worked in restaurants during his studies to become a chef at the end of his university career. Before running his own restaurant, the chef spent four years in London under Italian chef Giorgio Locatelli before returning to Mexico to open Rosetta.
Elena Reygadas has made a name for herself especially with handmade pastas such as hoja Santa tortellini (Mexican pepper). Its menu is also refreshing flatter (sauce made from pureed vegetables originating from Aztec and Mayan cuisines) with pistachios, romeritos tacos (fresh grass), and tamal (American Indian papillote) corn served with lukewarm smoked cream.
This is the third year in a row that such a rating has been awarded to a chef from Latin America. Last year, the honors were awarded to Colombia’s Leonor Espinosa, and in 2021 to Peru’s Pia Leon in 2021. What gives hope for a fairer recognition of local women leaders? It is for this reason that Elena Reygadas recently started a scholarship program for women with the goal of promoting greater equality in kitchens.
