Escondidinho of cassava and mushrooms
Ingredients
- two cassavas peeled and chopped
- 200 g shimeji
- 1 peeled and chopped onion
- 1 tablespoon vegetable oil
- 2 tablespoons of soy sauce
- salt to taste

Method of preparation
In a pan, place the cassava, cover with water, add salt and cook over medium heat until soft. Afterwards, turn off the heat, drain the water and, with the help of a fork, mash the cassava until you get a puree. Reserve. Wash the mushrooms and separate into smaller pieces. Reserve.
In a pan, put the oil and lead to medium fire to warm up. Add the onion and brown. Add the mushrooms, soy sauce and mix well. Cook for 7 minutes, stirring constantly. Turn off the heat and set aside. In a baking dish, make a layer with half the cassava puree, place the mushroom sauce over it and cover with the rest of the puree. Take to preheated oven at 200°C until golden. Serve immediately.

- two eggplants
- 1 cup of cooked quinoa
- 1 peeled and chopped onion
- 2 garlic cloves, peeled and crushed
- 1 red bell pepper, seeded and chopped
- 1 cup of chopped mushrooms
- 1/2 cup chopped Brazil nuts
- 1/2 cup of chopped parsley tea
- 2 tablespoons of olive oil
- Salt and ground black pepper to taste

Method of preparation
Wash the eggplants under running water and, with a knife, cut them in half. Remove the pulp, place it on a container and reserve the peels. Ingredients
- 100 g of sugar
- 150 g brown sugar
- 1 coffee spoon of salt
- 1/2 cup melted coconut oil
- 1/4 cup of tea vegetable milk
- 1 coffee spoon of vanilla essence
- 200 g wheat flour
- 1/2 teaspoon bicarbonate of soda
- 100g finely chopped vegan chocolate
- Coconut oil for greasing
Method of preparation
In a container, put the sugar, salt, brown sugar, coconut oil and mix until you get a homogeneous consistency. Add the vegetable milk and vanilla essence and stir until everything dissolves. Reserve.
