1. Oatmeal biscuit

Ingredients

  • 1 mashed banana
  • 1 egg
  • 1 cup of tea oat in flakes
  • 1/2 cup brown sugar sugar

Method of preparation

In a bowl, mix all the ingredients until you form a homogeneous mass. Grease a baking dish with coconut oil and shape the cookies and place them on the baking sheet. Ingredients

  • 3 tomatoes
  • 3 tablespoons cooked quinoa
  • 100 g of mashed ricotta
  • 1 zucchini cut into cubes
  • 1 chopped onion
  • 1 clove of minced garlic
  • Oregano and basil to taste
  • 1 tablespoon olive oil
  • Salt and black pepper to taste

Method of preparation

Wash the tomatoes, cut off the top and remove the seeds carefully. In a pan, sauté the zucchini with the onion, garlic, salt and black pepper. Turn off the heat and gently add the ricotta, quinoa, basil and oregano, drizzle with a little olive oil. Stuff the tomatoes with this mixture and bake in a preheated oven at 180ºC, in a greased baking dish, for about 20 minutes. Serve immediately.

Ingredients

  • 10 gems
  • 100 g grated fresh coconut
  • 1 glass of homemade coconut milk
  • 1 tablespoon of green banana biomass
  • 2 tablespoons of coconut oil
  • 1 teaspoon vanilla extract
  • 1 and 1/2 cup of demerara sugar

Method of preparation

Sift the yolks so they don’t have an egg odor or taste and set aside. Beat the coconut milk with the biomass and transfer it to a container with the grated coconut, the coconut oil, vanilla extract and sugar. Add the sifted egg yolks little by little, mixing gently. Put it in a greased shape and sprinkled with demerara sugar. Take it to the oven in a water bath for approximately 60 minutes at 180°C. Develop when the quindim is warm. Serve immediately.

4. Light Chicken Parmigiana

Ingredients

  • 2 breast fillets chicken
  • 1 teaspoon olive oil for brushing
  • 4 chopped Brazil nuts
  • 1 lemon juice
  • Salt and black pepper to taste
  • 2 slices of light mozzarella
  • 1 cup of fresh tomato sauce
  • 1 teaspoon of oregano

Method of preparation

In a container, season the fillets with lemon, salt and black pepper. Line a baking sheet with aluminum foil and place the fillets. Brush them with olive oil and sprinkle with Brazil nuts. Take to preheated oven at 180°C for 20 minutes or until golden. Remove from the oven, cover with mozzarella and water with the tomato sauce. Take it back to the oven for 5 minutes. Serve immediately.
