Braised tofu with quinoa and vegetables
Ingredients
- 1 and 1/2 cup diced tofu
- 1 cup of tea quinoa
- 1 cup of broccoli florets
- 1 cup okra cut into pieces
- 2 crushed garlic cloves
- 2 tablespoons of olive oil
- Salt and ground black pepper to taste
- Water
Method of preparation
Soak the quinoa in water for 12 hours. After this period, drain the water and wash the grain in running water. In a pan, place the quinoa, cover with water and bring to a boil. Let the ingredient cook until it becomes soft, turn off the heat, drain the water and set aside.
In another pan, place the broccoli florets, the okra and cover with water. Take to the fire and let the vegetables cook until they are soft. Turn off the heat, drain the water and reserve the broccoli florets and okra.
In a frying pan with olive oil, brown the garlic. Then add the tofu and sauté it until it turns golden. Turn off the heat and transfer the tofu to a bowl. Add the quinoa, broccoli florets and okra. Mix well, season with salt and pepper and serve immediately.
heart of palm stroganoff
Ingredients
- 1 cup of tea rolled oats
- 1 tablespoon olive oil
- 1/2 chopped onion
- 4 crushed garlic cloves
- 1 cup chopped heart of palm
- 1/2 cup sliced Paris mushroom tea
- 1 cup of natural tomato sauce
- 2 tablespoons of mustard
- 1/2 cup of parsley tea
- 2 tea cups of warm water
- 1/2 teacup of cold water
- Salt, ground black pepper, thyme powder and chopped rosemary to taste
Method of preparation
In a container, place the oats and warm water. Mix well and let rest for 30 minutes. After that period, beat the mixture in the blender and book. In a pan with olive oil, brown the garlic and onion. Then add the hearts of palm, mushrooms, tomato sauce, mustard and beaten oats. Stir well and add the parsley, thyme, rosemary, cold water, salt and pepper. Let it cook for 3 minutes, turn off the heat and serve next.
fantastic zucchini
Ingredients
- 400g zucchini, sliced
- 1 cup skinless tomato cut into thin strips
- 1 teacup of chopped walnuts
- 1 tea cup of soya milk
- 1 tablespoon of oregano
- 1/2 cup French bread crumbs
- 1 cup of tea chopped tofu in small pieces
- 1 tablespoon olive oil
- Salt and ground black pepper to taste
Method of preparation
In a pan with olive oil, place the zucchini and sauté for 5 minutes. After this period, turn off the heat and season the vegetable with salt and black pepper. In a container, mix the soy milk, bread crumbs and nuts and set aside. In a baking dish, place half of the zucchini and, on top, add half the tomato, half the tofu and half the oregano. Then add the rest of the zucchini and, on top, add the rest of the tofu, tomato and oregano. Water the recipe with the reserved sauce and take it to the preheated oven for 30 minutes.
