Vegetable crisps, a fake good idea for an aperitif?

Ever since veggie crisps hit the supermarket shelves, you’ve been swearing by them. Just like your friends elsewhere whom you have cunningly converted. What a joy to taste supposedly “diet” shortbread cookies! With their colors and variety of vegetables, you almost have the impression of healthy eating as an aperitif. And for good reason, who says vegetables says vitamins, fiber and minerals, right? Hmm Before you think about vegetables, remember that they are basically chips. And that’s the whole point.

Vegetables yes, but without the benefits

Vanessa Bedja-Haddad, a nutritionist and dietitian in Paris, immediately declares: “they have no nutritional interests.” Where have the benefits of vegetables gone? “They don’t exist. “Cooking at a high temperature leads to the loss of vitamins, minerals and fibers,” says the specialist. Dehydrating vegetables also causes them to lose all the water they contain. You don’t have to feel guilty eating these turnips, zucchini, and other roasted beets. So it is always better to use fresh vegetables.

So much fat

Comparing the labels, we also see that the veggie crisps are just as greasy as the potato crisps. Alice Le Grand, a dietitian and nutritionist in Paris, explains: “They both contain 25 to 35% fat.” Of course, everything depends on the purchased brand. “The oils they are fried in and the way they are fried are different. So always read the label, checking the amount of salt used, the amount of saturated fat, the less the better, and the variety of oil. The latter is preferable to choose naturally equipped and not mechanically equipped. For the latter, the label says “AG (fatty acids) trans”, adds the professional.

In other bad news, Vanessa Bedja-Haddad notes that the veggie version of the crisps “contain the same level of salt as potatoes, averaging 1 to 2g per packet.” As for sugar, the results are not more satisfactory, as both have about the same amount. According to the expert, carrots and beets are the sweetest.

If a priori, nothing indicates that it is better to choose vegetable crisps than potatoes, nothing prevents you from removing them from your aperitif tables. As with any food, it’s all a matter of proportion. Version: homemade will always be better received by the organization. “We cut them, sprinkle them with olive oil and bake them in the oven. They will be much less caloric,” assures Vanessa Bedjai-Haddad. So a word… to your ovens.
