Hazelnut, chestnut and chocolate
With its woody notes and buttery taste, chestnuts are a real ally in baking. To enjoy them all season long, slide them into a warm chocolate sauce or pancake cake, mixing chestnuts, pears and walnuts does not need to be proved.
Another foolproof combination, hazelnuts and chocolate are mixed into a soft crumb cake or an airy mousse. Common among the great American pastry classics, hazelnuts also slide into a cookie or add crunch to a traditional brownie.
Quince season
A cousin of the apple and pear, the quince, this iconic fruit is eaten from September to November. To be enjoyed until the end of the month, it is cooked as a tatin, resting on a buttery puff pastry, or, mixed with a nutty crunch, in an oven-roasted melting apple heart.
In turn, in season from November to mid-January, the Corsican clementine is one of the island’s greatest prides. Its quarters are eaten in a candied syrup that is flavored with a creamy chocolate custard.
