RESEARCH – From aperitif to late night, including dinner breaks, complex natural drinks, wines and spirits, all without alcohol, fill our glasses. Pleasure is possible without intoxication, and it even becomes a reflex.
Soft light falls on sculptural Baccarat glass, creating a golden star on a white tablecloth. It’s a magical sight that hits the eye when you sit down at Anna-Sophie Pic’s table in Valance. A vision that catalyzes a subliminal message. It’s not just the plate here. There is also what we are going to drink. The cellar, the wine… of course. And since the end of the incarceration, a non-alcoholic food and drink pairing designed as a tailored dialogue. High fashion! “We already had some non-alcoholic pairings, but not a full unit like today. It was the mandatory suspension of our activities that allowed me to work on such a proposal. I created this project with team leader Paz Levinson and my head sommelier, Edmond Gasser. But it couldn’t be limited to just three, we had to bring the whole team together around this project.”
