This is the favorite holiday of chocolate lovers. Finally! Spring appears and rings the Easter bells as it passes. And because we don’t change good habits, this year once again, pastry chefs and chocolatiers are rolling up their sleeves to imagine even more stunning creations. Overview of this 2023 edition.

They are imagined as real jewelry. Like Michelangelo and his block of marble, chocolatiers and pastry chefs manage to create stunningly realistic creations while combining flavors that are sometimes regressive, sometimes original. Ian Bryce’s creation for Evok is no exception. For Easter, the Meilleur Ouvrier de France imagines a collection around the universe of the beehive and creates an authentic chocolate statue that takes the outline of a bee. And the design matches the flavors. she slips into a honey and pollen marshmallow and almond praline.

Ditto for iconic pastry chef Pierre Hermé and his Pierre de Soleil creation. Inspired by a masterpiece of Aztec art on display at the National Museum of Anthropology, this flat-faced egg reveals the face of the sun god Tonati, surrounded by concentric circles representing the star’s rays, days, and stars. Its heart reveals hazelnut praline and an assortment of dark and milk chocolate eggs.

On the palace side, Maxence Barbot, the talented pastry chef at the helm of Shangri-La Paris, creates an eggnog that he abandons in dark chocolate and milk chocolate, garnished with fine crumb to create a puff pastry. Its shape, reminiscent of an ice cream cone, encourages gluttony. Not to mention the caramel, vanilla and hazelnut notes explode.

Childhood memories

A memory of a tender age that often ended with an overdose of chocolate, Easter is a treat for young and old alike. Inspired by the details of their childhood, some pastry chefs give life to little characters that are as lovable as they are delicious.

At her first Easter party at the helm of her brand new chocolate factory, called Madame Cacao, former Élysée pastry chef Christelle Brois imagines Lucien the rabbit. With its sleek style and modern silhouette, it comes in milk chocolate and dark chocolate, topped with toasted rice praline and lots of toasted goodies. In turn, the native of Nantes, Vincent Guerle, chose to give life to a little Viking with a red beard, whose belly is full of delicacies.

Cyril Lignac, for his part, seems inspired by the birth of his first child. To celebrate Easter, he brings to life Simon the lion, Susie and Fernand the elephant, cute characters decorated with little praline eggs and mini bears. One thing is certain: adults are just as tempted as children.

A side of dessert

If some people never turn down a piece of chocolate, others will be more tempted by a dessert that is meant to be shared. Fortunately, the chefs are answering the call to satisfy all the gourmands.

Nina Metayer serves an Easter cake, which she christens “Le Nid”. its shape resembles both a bird’s nest and a cowloff, a tribute to its Alsatian origins. Airy and sweet, Savoie shortbread is filled with lemon confit and vanilla Bavarian cream.

Inspired by La Botte’s unbeatable desserts, Jeffrey Cagnes plays the original card with an egg-shaped tiramisu, while the tropézienne cake turns into a chocolate and praline version. The hardest part is yet to come: the choice.
