The amount of sodium consumed by Ukrainians mainly in the form of table salt affects the overall risk of developing cardiovascular disease.
The Ministry of Health invites manufacturers to gradually reduce the salt content in baked goods. This was announced on Friday, June 7, in a message on the website of the Ministry of Health.
In particular, doctors urge Ukrainian bread producers to reduce the amount of salt in bread and bakery products to a level not exceeding 0.9 g per 100 g.
“This can be done gradually to get consumers used to the less salty taste,” the department suggests.
The Ministry of Health emphasized that bread remains one of the main products from which Ukrainians obtain salt.
“Each Ukrainian consumes about 250 g of bread per day. The salt content of most types of bread ranges from 1.07 to 1.7 g per 100 g. This means that a piece of bread (30-40 g) can contain up to 0.68 g of salt,” the department explained and suggested that manufacturers look for other ways to improve the taste of baked goods.
“For example, using herbs and spices or even fermented foods can help offset salt reduction,” it says.
Doctors indicate that reducing total salt intake will contribute to a healthy diet and a reduction in non-communicable diseases.
“Reducing salt consumption will help prevent the spread of non-communicable diseases, which annually cause about 80% of premature deaths in Ukraine,” the doctors stressed.
The Ministry of Health added that according to the STEPS National Study, which studied the prevalence of risk factors for non-communicable diseases in Ukraine in 2019, Ukrainians on average consumed about 12.6 g of salt per day, while the WHO recommends that the daily standard should not exceed 5 g Therefore, Ukrainians daily exceed their salt intake by more than 2.5 times.
The head of the Transcarpathian OVA, Viktor Nikita, said that Ukraine is forced to buy technical salt in Africa, because the Bushtinskoe salt deposit in the Transcarpathian region is not working at full capacity.
At a Neolithic settlement in Turkey, archaeologists have discovered bread that is about 8,600 years old.
