The Russian scientific center Skolkovo began to develop food additives from insect larvae. They have started baking bread from the black soldier fly, reports The Moscow Times.
According to the developers, protein from low-fat insects allows you to double the ripening process of the dough, as well as significantly increase the shelf life of bread.
The general director of the company Biolaboratory, which breeds flies, Gennady Ivanov, said that the market for insect products in Russia has not yet been developed, and psychological barriers to consumers need to be overcome.
“Getting used to the idea that this is normal and even beneficial must happen gradually. When people feel the effect of this fly on a daily level, they will notice that they get sick more often , they will be more relaxed about accepting insects in medicines and food products,” said Ivanov.
In October 2023, Russian authorities recognized the breeding of black soldier flies as an agricultural sector. The Federal Center for Animal Husbandry of the Russian Federation said that the use of insect larvae in products would “strengthen the country’s food supply.”
