Experts studied the aging of amber and Indian ales by comparing the stability of beer stored in glass bottles and aluminum cans.
Scientists conducted a new study and said that the freshness of beer depends on its type and the container in which it is stored. Technology Networks writes about it.
It has been noted that the drink stays fresher in bottles when it comes to amber ale. If it is an Indian ale, then the choice of container has almost no effect on the safety of the beer.
“Beer contains various flavor compounds produced by yeast, hops, and other ingredients. During storage, these compounds undergo chemical reactions that destroy some flavor components and form new ones. This process can lead to the fermentation of beer, which results in the reduction of some components. pleasant and unpleasant flavors increase,” said the scientists.
For example, researchers Jessica Prenny and colleagues studied the aging of amber and Indian ale by comparing the stability of beer stored in glass bottles and aluminum cans.
The container with the drink is cooled for a month, and then stored at room temperature for another five months.
Every two weeks, experts check the content of metabolites.
“The concentrations of some metabolites in smber ale, such as some amino acids and esters, differ significantly depending on whether it is packaged in a bottle or can. In contrast, IPA is less sensitive to the type of packaging, possibly due to the higher concentration of polyphenols found in hops, which not only prevent oxidation, but also bind to amino acids, keeping them in the beer instead of allowing them to stick inside the container,” added scientist.
Thus, brewers are advised to separately select containers for a specific type of beer.
Remember that earlier in the forests of Dublin for the first time the ancestor of yeast, used in brewing, was discovered.
