Chia is a nutrient-rich seed and offers many health benefits, including reducing the risk of cardiovascular disease, regulating blood sugar, aiding digestion and preventing constipation. In addition, it is an excellent source of protein, fiber and omega 3, which help reduce inflammation in the body, maintain brain and heart health and control cholesterol.
“It also provides more satiety, because, in contact with liquid inside the stomach, it forms a kind of ‘gel’ that dilates the stomach, also helping with weight loss”, explains nutritionist Roseli Rossi.

1. Chia cookies
Ingredients
- 100 g of whole wheat flour
- 60 g vegetable cream
- 30 g brown sugar
- 2 tablespoons of chia seed
- 1 teaspoon powdered yeast
- 1 pinch of salt
Method of preparation
Place the ingredients in a bowl and knead until you get a smooth and homogeneous dough. Open the dough between 2 plastics and cut in the desired format. Arrange on a baking sheet lined with parchment paper and bake in a preheated oven at 200°C for 10 minutes. Remove from oven and serve.
2. Brigadier with chia
Ingredients
- 395 g light condensed milk
- 1/2 cup skimmed milk tea
- 3 tablespoons unsweetened cocoa powder
- 3 tablespoons unsweetened rice flakes
- 2 tablespoons of chia seed
Method of preparation
In a pan, add condensed milk, skimmed milk and cocoa. Take to medium fire and stir non stop for 10 minutes or until it degrades from the bottom of the pan. Transfer to a bowl and, once the mixture has cooled, add the rice flakes and chia. Mix and serve then.
Tip: if you prefer, leave the brigadeiro ready to roll, form balls and serve in paper cups.
3. Chia and chocolate pudding
Ingredients
- 2 tablespoons of chia seed
- 125 ml of milk
- 1 tablespoon cocoa powder
- sweetener to taste
- 1/2 teaspoon vanilla essence
Method of preparation
Grind the chia in a blender, add the other ingredients and blend again. Dispose of the mixture in individual containers and take to the fridge for 15 minutes. Serve immediately.
4. Almond chia cake
Ingredients
- 1 cup of sliced almonds
- 3 eggs
- 200 g of natural low-fat yoghurt
- 1 tablespoon coconut oil
- 1/2 tablespoon canola oil
- 2 cups of whole wheat flour
- 1 teacup of wheat flour
- 2 tablespoons of oats
- 2 tablespoons of culinary powder sweetener
- 4 tablespoons of chia seeds
- 1 tablespoon chemical yeast
- 2 dessert spoons of honey
- Coconut oil for greasing
- Wheat flour for flouring
Method of preparation
Chop the almonds and set aside. Beat the eggs, yogurt, coconut oil and canola oil in a blender. In a bowl, mix the flours, oats, sweetener, half of the almonds, chia seeds and baking powder. Add the beaten cream and stir until the dough is homogeneous. Put it in a greased shape with coconut oil and infarcted with wheat flour. Take to preheated medium oven for 30 minutes or until golden. Remove from the oven and, still hot, spread the honey and splash the rest of the almonds. Serve immediately.
5. Strawberry chia mousse
Ingredients
- 200 g of natural yogurt
- 10 strawberries
- 2 tablespoons of chia seed
- 100 ml whole milk
Method of preparation
In a container, let the chia seeds hydrate in the milk for half an hour. In a blender, blend the yogurt and strawberries until smooth. Transfer to a container and add the hydrated chia seed in the milk. Mix and refrigerate before serving.
