With its fiery color and juicy texture, the nectarine is undeniably the fruit of summer. If it’s delicious raw, we appreciate it just as much as slipped into tiramisu, roasted with spices, or hidden in crème brûlée. We’re taking advantage of its high season to reveal 25 recipes that smell like summer.
Overturned cake and demolition
At a picnic, after the beach or for a simple snack, this summer we choose fruit candies. As for the cakes, we play the card of originality with semolina and nectarines to be decorated with red fruits or cream coulis. Seasoned pastry chefs will opt for the Inverted Nectarine Cake, a recipe with an amazing sauce that will wow the whole table.
And for those rainy summer days, we opt for the regressive nectarine meltdown, in which sweet and slightly caramelized nectarines are filled with butter and melted butter. Nothing is more comforting.
No cooking
To make life easier as temperatures rise, we’re ditching no-bake desserts like nectarine tiramisu. Creamy, the Italian dessert in this recipe is garnished with speculoos and chocolate balls for extra flair. The same goes for the nectarine and strawberry blancmange garnished with mint. The ideal touch of freshness after a long summer day.

If nectarine is delicious at the end of a meal or slipped into a cake, it is also appreciated in a cooked dish. So it’s added to traditional coq au vin for a summery version, or enjoyed in a carpaccio with putardier. A recipe signed by the three-star chef Arno Donckele.
As for appetizers, this original recipe boils nectarines with ginger and lemon, then tops them with vanilla-flavored rice. Steam between June and September.
