- Roll out the puff pastry
- Cut the puff pastry into strips
- Cut triangles along the length of the strips
- Roll each triangle from base to tip
- Arrange the mini croissants on a baking sheet lined with parchment paper
- Brush the croissants with egg yolk
- Sprinkle mini croissants with sugar and cinnamon
- Bake until golden brown
